Yogurt Whipped Custard
Yogurt paste and whipped custard are mixed to make a smooth yogurt-flavored whipped custard.
Use as a topping for cream puffs or pancakes.

Material
- Egg yolk / 50g
- Milk / 250g
- Granulated sugar / 50g
- Cake flour / 25g
- 47% Fresh cream / 150g
- Granulated sugar / 15g
- Yogurt paste / 60g
- Vanilla bean / 3cm
Recipe
1. In a bowl, mix the egg yolks with granulated sifted flour.
2. Warm the vanilla beans and pods in a saucepan with the milk.
3. Add the warmed milk mixture to [1] a little at a time.
4. Strain the mixture through a strainer into a saucepan. 5.
5. Heat the saucepan over the heat, stirring with a spatula, until the mixture becomes creamy. 6. Transfer the mixture to a baking pan, cover with plastic wrap and refrigerate.
7. Add the granulated sugar to the cream and beat to 9 parts cream.
8. Gradually beat the whipped cream into the chilled custard mixture.
9. Add the yogurt paste.
