Strawberry and Almond Custard Tart

A light custard cream tart made with almond milk.
Made without milk.

Material

tart crust

  • Salad oil / 30 g
  • Whole egg (net) / 50g
  • Granulated sugar / 40g
  • Cake flour / 150g

Custard

  • Egg yolk / 40g
  • Granulated sugar / 50g
  • Cake flour / 20g
  • Dark almond milk, mild plain / 200g

Topping

  • Strawberry / 24 pieces

Recipe

Tart
Mix salad oil, whole eggs and granulated sugar.
Add the sifted flour, mix together and refrigerate for at least one hour.
Spread the mixture evenly with a rolling pin, spread it into a mold, and picket it.
Bake in a preheated oven at 180℃ for 20 minutes.

Custard
1.Mix the egg yolks with granulated sugar.
2. Mix the sifted flour into the 1.
3. Heat the almond milk in a saucepan to 60°C (140°F).
4. Add 3. to 1. and strain through a strainer.
5. Stir with a rubber spatula and heat.
6. When the mixture has thickened, transfer it to a vat and refrigerate.

Finishing touches
Spread the custard over the cups and top with strawberries and mint.
