Sauteed duck with chocolate and balsamic sauceNEW
Juicy duck meat and a rich chocolate-based balsamic sauce are generously tossed together in this boozy main dish.

Material(For 4 persons)
- Duck leg meat / two sheets (pieces) (of paper)
- Herb salt / 5g
- Rosemary / 5g
- Tsukuba Chocolate syrup / 30g
- Balsamic vinegar / 40ml
- Soy sauce / 2 ml
- Mustard (grains of mustard) / 5g
- Marmalade jam / 30g
- Olive oil / 10g
- Cherry tomato / 26g
- Baby leaf / 5g
- Lemon / 1/4 of a piece
Recipe
1. Sprinkle the duck with herb salt and marinate half a day or overnight to season.
2. Add 2 sprigs of rosemary to the pan and brown the duck.
3. Remove the rosemary, wrap the cooked duck in aluminum foil and let it rest for about 20 minutes.
In the same pan, add 10 g of the duck oil, the chocolate syrup, balsamic vinegar, soy sauce, mustard and marmalade jam.
5. place the sautéed duck in a serving bowl and pour the chocolate x balsamic sauce over the duck.
Garnish with baby leaves, cherry tomatoes and lemon wedges.
