Gelato Pistacchio

This is a royal Italian gelato made with pistachio paste.

Material

  • Milk / 349g
  • Granulated sugar / 50g
  • Pistachio Paste T / 30g
  • Fresh cream (35%) / 70g
  • Stabilizer / 1g
  • Salt / small quantity
  • Pistachios (for topping) / proper quantity

Recipe

1. Mix the pistachio paste T with the cream and add the milk a little at a time while heating.
2. Add granulated sugar, stabilizer, and salt, and dissolve at 80°C. Cool and pour into an ice creamer.
3. Cool and pour into an ice creamer.
4. Serve in bowls and top with pistachios.
