Cookies (with butter powder)

Crunchy cookies made with shortening and fermented butter powder added.

Material

  • Shortening / 100g
  • Powdered sugar / 60g
  • Table salt / 0.5g
  • Whole egg / 25g
  • Wheat flour / 200g
  • Butter powder (made from fermented butter) / 10g

Recipe

1. Sift together flour and butter powder.
2. Pomade shortening into a pomade.
3. Add powdered sugar and mix.
4.Add salt and mix.
5.Beat the whole egg and add to the mixture in 3 batches, mixing each time to prevent separation.
6. Add 1 egg mixture, cover with plastic wrap, and refrigerate overnight.
7. Roll out the dough to a thickness of 3 mm and cut out with a mold.
Bake in a preheated oven at 170℃ for 14 minutes.
