Cold onion soup served with marinated scallop and Almond Milk emulsion

〈Cold Soup〉
- Onion / 500g
- Rich Almond Milk (made with fresh almonds) / 300g
- bouillon / 160g
- Salt & Pepper / Proper amount
〈Foamy almond milk〉
- Rich Almond Milk (made with fresh almonds) / 200g
- Granulated sugar / 20g
- Gelatin / 4g
〈Marinated scallop〉
- Scallop(SizeM) / 8 Scaptular
- Olive oil / Proper amount
- Garlic / Proper amount
- Parsely / Proper amount
- Pink pepper / Proper amount
Recipe

1.Slice onions.
2.Heat the olive oil in a pan, and put sliced onions. Continue frying on medium heat until tender, and then add bouillon to cook.
3.When softened, put in the blender. Add almond milk, season with salt and pepper, and chill.
〈Foamy almond milk〉
1.Put almond milk and granulated sugar in a pan to warm, and add gelatin.
2.Whip it with a hand-mixer.
〈Marinated scallop〉
1.Season a scallop with salt and pepper.
2.Put the olive oil and sliced garlic in a frying pan to heat. When slightly browned, add the scaloop to saute on each side. Leave them in the oil to chill.
3.Cut evenly into four pieces to put on a spoon. Sprinkle chopped parsely and pink pepper over them.
