Citrus Yogurt Scone(F3)

This American scone is made with yogurt-flavored dough and a generous amount of orange peel.

Material(For 6 pieces)

  • Wheat flour / 150g
  • strong flour / 50g
  • baking powder / 10g
  • granulated sugar / 25g
  • table salt / 2g
  • unsalted butter / 60g
  • Sour Base F3 / 40g
  • Mild conc. or Mild conc. R / 20g
  • water (esp. cool, fresh water, e.g. drinking water) / 30g
  • Stensma Orange Peel Dice / 80g

Recipe

1.Cut unsalted butter into 1 cm cubes and refrigerate.
2. In a bowl, combine flour, strong flour, baking powder, granulated sugar, and salt, and mix lightly with a whipper.
3. Add [1] and stir to combine. 4.
4. mix sour base F3, mild concoction and water, add to [3] and knead lightly. 5.
5. take out on a floured board, add lemon peel and orange peel, and bring together.
6.Roll out the dough into a circle 2 cm thick, wrap in plastic wrap and refrigerate for 1 hour.
7.Cut into 6 pieces.
8.Bake in a preheated oven at 210℃ for 17 minutes.
