Caramel custard cream

Caramel-flavored custard cream with a bittersweet accent.

Material

  • Milk / 57%
  • Egg yolk / 12%.
  • Granulated sugar / 15%.
  • Corn starch / 6%
  • Bitter Caramel or Caramel Milk / 10% (%)

Flavor (optional) as per requirement

Recipe

1. Mix egg yolks and granulated sugar.
2. [1] Add cornstarch and sift through the mixture until smooth.
3. Heat milk in a saucepan to 80°C , then add the bitter caramel (caramel milk) and mix.
4. Gradually add 3 to 2, stirring and straining the mixture back into the pot.
5. Heat while stirring with a spatula.
Once the mixture is glossy, remove from heat and transfer to a tray to cool.
