Tart with sour filling

Material

  • Water (drinking water) / 67%.
  • Corn starch / 5% (of the total)
  • FDR powder / 7%
  • Granulated sugar / 10% (%)
  • Unsalted butter / 10% (%)

Recipe

1. Dissolve cornstarch in water in a saucepan over heat while stirring.
2. Mix granulated sugar and FDR powder, add to [1], and stir to dissolve.
3. Stir with a rubber spatula and heat until it becomes fluffy.
4. Remove from heat, add butter and melt in preheat and mix.
Transfer the mixture to a baking pan and cool. Transfer to a baking pan and let cool (overnight).
