  • Wheat flout / 40g
  • Almond pudding / 30g
  • Baking powder / 1.5g
  • Caramel powder / 7g
  • Unsalted butter / 70g
  • Albumen / 70g
  • Granulated sugar / 70g

Coating Chocolate

  • White chocolate / 95g
  • Bitter caramel powder / 5g

Recipe

1.Melt unsalted butter.
2. beat egg whites in a bowl with a whisk to combine and strain to remove any lumps.
3. add granulated sugar to [2] and mix.
4.Add the sifted flour, almond pudding, caramel powder, and baking powder to [3] and mix.
5.Add [1] to [4] and mix. 6.
Let rise at room temperature for 1 hour. 7.
Pour into molds and bake in a preheated oven at 180℃ for 20 minutes. 8.
Unmold and remove from heat. 9.
Temper and coat with white chocolate mixed with bitter caramel powder.
